Define the blanching purpose
Clarify whether the process targets enzyme control, softening, color preparation, surface treatment or preparation for frying or freezing.
- The required endpoint varies by product.
- Cut size changes heat transfer.
- Over-processing may damage texture.
Control temperature and retention
Continuous equipment combines heating, conveying and residence-time control; settings require product testing.
- Review product distribution in the machine.
- Measure the actual product response.
- Coordinate feed rate with downstream cooling or drying.
Heating and water management
Select steam, hot-water or another approved arrangement against utilities, sanitation, heat recovery and maintenance.
- Do not repeat unsupported energy-saving percentages.
- Plan make-up water and drainage.
- Control carryover into the next process.
Choose the equipment format
Product buoyancy, fragility, particle size and required agitation influence belt, basket or other blancher selection.
What to Send Before Equipment Selection
Provide raw material, finished product, target throughput, package format, workshop dimensions, voltage, utilities, project stage and any local standard. These inputs allow a configuration discussion without inventing specifications.
