Potato preparation
The process begins with receiving, washing, peeling, trimming and cutting to the target strip size.
- Raw potato solids and defects affect yield.
- Cut-size consistency supports even blanching and frying.
- Rinsing removes loose surface starch.
Blanching and drying
Blanching conditions are developed for the potato and product specification; surface water is then reduced before pre-frying.
- Confirm temperature and retention through product testing.
- Control carryover water into the fryer.
- Coordinate blancher and dryer capacity.
Pre-frying and oil management
Pre-frying develops the required surface structure before cooling and freezing.
- Match fryer residence time to strip size.
- Include filtration and deoiling.
- Avoid presenting one universal capacity range.
Freezing and packaging boundary
Select freezing, frozen-product handling and packing only after the required core temperature, dwell time and cold storage are defined.
What to Send Before Equipment Selection
Provide raw material, finished product, target throughput, package format, workshop dimensions, voltage, utilities, project stage and any local standard. These inputs allow a configuration discussion without inventing specifications.
